The electric panel next to my meter has 8 breakers and a main switch. I’ve always heard that 6 breakers were all that were allowed. Is this true?

Yes and No. The 2017 National Electrical Code requires no more than 6 handles to be thrown to kill the power to the house. The main switch will kill all of the power with one throw. If the main switch was not present, then 6 breakers would be the maximum allowed.
